All year round we strive to respect the plant and the fruit in order to bring in the healthiest harvest possible in our winery.
The vinification of Château Enclos Haut Mazeyres is carried out for many weeks in the cellar in stainless steel and concrete vats in order to extract the maximum from the work done in the vineyard over many months.
All our vats are thermo-regulated in order to control the temperature as much as possible and to refine our wine during the vinifications. For this wine, malolactic fermentation is carried out in barrels.
Château Enclos Haut Mazeyres spends 18 months in barrels (70% in 300l and 30% in 400l) before being bottled.
We produce between 15,000 and 25,000 bottles of Château Enclos Haut Mazeyres.
This wine is mainly sold for export, in restaurants in France and abroad, and in wine shops.
